I enjoy a good slice of tomato on my burger. But it has to be right. I don’t like warm/floppy and I don’t like cold/crunchy. Has to be in-between, it’s hard to explain.
Ripe, at or near room temperature, thick enough to hold form and texture, thin enough to yield to bite, so as to provide substance and flavour while not being pulled prematurely from the sandwich in toto.
