Reasoning:
Plaid patterns kinda look like a city street grid.
Plaid clothing/flannels is often worn by and associated with people who would buy organic, or are ‘earthy’ (see: Vermont Flannel)

Potential cons:
Could be confused with the Plaid Bank Linking App.
I like this a lot. My only fear is that Fintech suing the project. Not that it would have merit - completely different industries, after all - but just proving that could kill the project or force another name change.
